A biodynamic winery established in 1980 in the village of Vittoria, south east Sicily – within the Cerasuolo di Vittorio appellation.
They specialise in using the islands native varietals such as Frappato, Nera d'Avola, Grecanico and Inzolia. Today, COS are regarded as a benchmark natural wine producer on Sicily. The wines are notable for their great purity of fruit and transparency.
Nero di Lupois made from 100% Nero d'Avola. The wine is fermented with indiginous yeasts and aged in concrete vats for nine months followed by three months resting in bottle prior to release.
Vibrant red and black fruits, black olive, annis and earth on the nose. The palette is soft, yet structured with a hint of fine tannins. A real purity of the Nero d'Avola fruit here in this precise and well made wine.
Pair with charcuterie, braised beef shin, and tomato based pasta dishes.
