Jean-Benoît Cavalier transformed the land of his family home into Domaine Cavalier in the 1980s.
Domaine Cavalier is the sister property of Château Lascaux – where Jean-Benoît has also made great improvements since taking over from his father - and is located within the appellation of Saint Guilhem le Desert Val de Montferrand IGP, Languedoc-Roussillon. Vineyards at Cavalier are organically farmed, and certified by ECOCERT.
Bordeaux style blend of 60% Cabernet Sauvignon, 30% Syrah and 10% Merlot. Traditional vinification with maceration of 3 weeks, and then raising in vats for 3 months before bottling.
The nose is fresh, savoury, with dried herbs and deep aromas of black fruits, cassis and plum. On a mineral palette of gravel and stone, ripe blackcurrants entwine with smooth ripe tannins and spice. Medium in weight, well integrated with a long round finish.
Pair with roast game such a venison, duck, mature hard cheeses.
