Edouard and Eleni met while working the 2010 harvest in New Zealand. Soon after they were married and returned to Chablis to take over a small piece of Edouard's family domaine. Edouard's family owns Domaine Vocoret & Fils, a large and established domaine of over 50 hectares.
Their primary focus with their first 4.9 hectares was farming, and readjusting the vineyard practices to lutte raisonnée and hand harvesting. Wines spend 12 months in barrel.
En Boucheran lies on the left bank of the river between Montmains and Vaillons. There are three levels in the plot which allows for blending combining quarried stone, light clay and smaller stones. This brings some extra complexity to the wine
The nose shows grapefruit, orchard fruit, white flowers, seashell minerality and lemon zest. The palette adds bracing acidity around a lovely detailed expression of apple fruit.
Pair with truffle, escargot, lobster.
