Family estate that now spans 12 hectares in the commune of Mercurey, and including six Premier Crus. Founded by Emile Juillot at the beginning of the century, it is now managed by granddaughter Nathalie as of 1987.
The Champ Martin vineyard comprised of two parcels is located on hillsides of beige marl punctuated by limestone at an altitude of 300 metres facing south south-east. Management is by Lutte Raisonnée principles with no use of herbicides, only tilling of the soil.
Fruit is hand-picked, and following careful sorting is 100% destemmed. A pre-fermentation maceration follows at 15°C for three days. Vatting for 15 days with moderate cap punching and pumping over for a gentle extraction. Matured for 12 months in barrels of which 25% are new.
The vineyard expresses itself with minerality and aromatic precision, purity and balance. Superb texture with a slightly saline finish.
Drink now or lay down for up to 8 years is recommended.
