Purchased in 2009 by Australian Paul Gordon and his Irish wife Isla, Domaine la Sarabande's 6.5 Ha is spread over 4 vineyard sites that lie just outside the Faugères village of Autignac.
Vineyards are organic, with no chemical herbicides or fungicides used. Only an organic fertiliser is used to replenish the soil. The grapes are harvested by hand, naturally fermented and the wines obtained are bottled without filtration or refining.
The bottling is Syrah 50% and Morvedre 40% - plus a small amount of Grenache - blend grown on schist soils.
In the glass a dark plum hue. The nose has a fine mineral core with grilled herbs, lavender and black berry fruits. Lots of juicy baked fruit and dark chocolate on a lush palette with a garrigue undertow, so typical of the region.
Pair with duck confit, grilled lamb, pasta with meat ragu.
