Cantine Paolini was founded in 1964. Today it is a large cooperative of growers on Sicily. They produce organically certified wines from native varietals on the island.
Frappato Baccarìa Terre Siciliane IGP, is from grapes grown on very rocky soil, picked by hand in early August. It is vinified and aged in stainless steel. No sulphur is used at any stage of the winemaking process.
