Established in 1976, Domaine Fichet started when Francis Fichet withdrew from the town co-op and began to make wines. His sons Oliver and Pierre-Yves took full control of the domaine in 1990. Oliver oversees all the wine making and vinification, while Pierre-Yves handles vineyard management.
There has been a steady increase in a biodynamic approach to vineyard management since 2009.
The vineyard of Burgy amounts to 5 ha in total, with a northwest exposition. It's a cooler site, but with climate change producing good fruit nowadays these Burgy vineyards have been in use since the 2005 vintage. Soils are of argilo-limestone.
Fermentation is in stainless steel, followed by between 10-12 months elevage in stainless steel with 6 months on the lees.
A fine white Burgundy to pair with seafood, shellfish, and soft ripe cheeses.
