Côte de Beaune domaine with vineyards spread across sites in Chassagne-Montrachet, Puligny-Montrachet, Meursault, Volnay Pommard, Santeany, Saint-Aubin, and Beaune – 14.8Ha, in a total of 22 appellations. Fernand & Laurent are the fourth generation of family winemakers.
Manual focus in vineyards, worked according to organic principles. Low yields a priority.
The Boucherottes 1er Cru site comprises 1.13 acres of vines planted between 1966 and 1996. Southern exposition on stony, brown limestone soil. The vineyard lies on the boundary of the Pommard 'Boucherottes' 1er Cru.
Grapes are hand-picked, destemmed and put into tank. After a few days of cold maceration, the alcoholic fermentation is traditionally started with regular cap punching, enabling very small temperature regulations of the fermenting grapes. Wine is aged in French oak barrels (40% new). Bottled at the winery after ageing of 18 months.
Garnet colour in the glass. The nose shows aromas of blackberry, blackcurrant, coupled with toasted and spicy notes. The palette echoes the fruit and spice, revealing a medium bodied supple and fleshy wine, with silky tannic structure.
Can be enjoyed relatively young, or potential ageing of between 4-15 years.
Pair with roast beef, strong soft cheeses.
