Federick Cossard has been a name to watch in natural wine circles for a number of years. He established his domaine is 1993, renting a few hectares of vineyards in Saint Romain and Auxey Duresses to get his start. His entry into Burgundy winemaking was from the ground floor, not being part of an established winemaking family. This makes his ascension all the more special given the challenges faced.
Cossard's wine business falls into two strands. His own Domaine de Chassorney, which now comprises 10Ha across a number of villages, and also his work as a négociant giving him access to fruit from various other sites. The latter wines are bottled under the labelling nomenclature of simply, 'Federick Cossard'.
His methods have been organic since he began back in 1993. This focus on the vineyard - scrupulous attention to detail throughout the growing season and site quality - ensure only the best fruit makes it into the wines. This allows very much a hands-off approach in the cellar, with white grapes being pressed straight into barrel where they rest on their lees until bottling, and red fruit spending approximately a month on their skins as whole bunches in open top casks before being pressed into the barrel prior to a similar period of rest on the lees. No lees stirring, just long uninterrupted fermentations - and no use of SO2 at any part of the process.
The old vines for this wine are located in a prime position right in the middle of the slope that benefits from a perfect combination of clay and limestone - due east on the same level as Grand Crus such as Chevalier-Montrachet. 1er Cru Les Folatières has superb aging potential.
