A biodynamic winery established in 1980 in the village of Vittoria, south east Sicily – within the Cerasuolo di Vittorio appellation.
They specialise in using the islands native varietals Frappato, Nera d'Avola, Grecanico and Inzolia. Today, COS are regarded as a benchmark natural wine producer on Sicily. The wines are notable for their great purity of fruit and transparency.
This Frappato is a lighter red representing fresh, aromatic, easy drinking. It could be likened perhaps to a good quality Cru Beaujolais.
Biodynamic farming is employed, which is aided by the dry conditions of the terroir. Fruit is hand harvested. Extended skin contact is carried out. Fermentations are only with natural, ambient yeast.
Aged in a combination of 440-liter clay amphorae, large neutral botti (oak barrels) and cement tanks, with no new oak treatment.
The nose shows cherry blossom, strawberry, orange peel, white pepper. On the palate - soft, delicate and well balanced with notes of sweet spices. The finish is lengthy with subtle acidity giving a real sense of freshness to the wine.
