Founded in 2000 by local growers, Adega Eidos produces Albariño from grapes grown in the Rías Baixas' Val do Salnés subdistrict.

The Padriñán vineyard comprises a singular south-facing slope overlooking the sea, its ideal exposure enhanced by reflection from the water and a wind-sheltering stand of eucalyptus at the top of the slope.

Selected grapes from vines over 50 years are destemmed, crushed and macerated under temperature control for maximum aromatic extraction. Natural yeasts are encouraged for a prolonged fermentation, the wine bottled beginning in April following the vintage after extended contact with the fine lees. Richly textured and exotically intense Albariños are the result, the salty sea breeze and granitic levels evident in a mouthwateringly mineral finish.

Eidos de Padriñán is the winery's primary bottling, and delivers ripe and extracted Albariño fruit with clear salty/mineral notes from the sea breeze and granitic soil. Following fermentation, the wine is subsequently aged on its lees. Total annual production averages between 3000 and 4000 cases.

On the nose subtile aromas of lime and dried tropical fruit. The wine has a round, generous textural feel on the palette of pulpy citrus fruits, coupled with a refreshing saline note and white pepper on the finish.
