Xavier and Géraldine Peyraud Combes settled in 1997 on the family estate of Géraldine that had up until that point sent all fruit production to the local cooperative. Xavier is from good wine stock – he is the grandson of Lulu Peyraud of the famed Domaine Tempier in Bandol.

They are located just south of Pic Saint Loup and have around 20 acres of vines planted to Grenache, Syrah, Merlot, Cabernet Sauvignon as well as white varietals. They also introduced Mourvèdre to the domaine, a classic varietal for the appellation. These cuttings came from Domaine Tempier in Bandol.

In the vineyard they work organically. There is little interference between vine rows with soils only turned once a year. Grapes are hand-harvested, fermentations are made only with indigenous yeasts, use of sulphur is kept to an absolute minimum, and wines are bottled unfiltered.

Terrasses du Larzac is a blend of Mourvêdre 55%, Syrah 30% and Grenache 15%. Vine age is between 15 to 40 years.

The vineyard plots are located on the municipalities of Puéchabon and Aniane, on limestone soils with a south-west exposition.

Fruit is destemmed following the manual harvest. Fermentation takes place in tanks at a controlled temerature of around 25 ° C. There is daily pumping over. The elevage is for 13 months in 400 litre barrels.

Beautiful deep red colour in the glass. The nose offers up a bouquet of red fruits, with notes of garrigue and roasted herbs. On the palate, a nice balance with very fine tannins. Hints of pepper and liquorice on a long finish.

Pair with grilled red meats, stews.
