From the foothills of the Pyrenees this wine is made from the young Syrah and Grenache vines of Domaine Fontaneil. Elodie and Matthieu Collet bought the domaine from Pierre and Marie-Claude Fontanel in 2017. Their goal is to make traditional wines, expressive of Roussillon. The estate stretches over 30Ha.
Soils are very stony clay-limestone with schist on steeper hillsides.
Fruit is totally destemmed. Short maceration of only two weeks with daily pumping over and thermoregulation. Maturing period of 6 months in metal tanks. No oak treatment.
Dark fruits and spice, very fruit forward. Round subtle tannins due to short maceration and lack of oak, but still nicely structured with good acid. Velvety, textural.
Pair with game birds, grilled meats, charcutierie.
