Serafini & Vidotto 'Phigaia' Montello e Colli Asolani, Veneto 2019

Francesco Serafini and Antonello Vidotto, oenologists and farmers, founded the winery in 1986 at Nervesa della Battaglia within the “Montello-Colli Asolani” DOC area. 20Ha of vineyards which are managed sustainably. All vineyard activity is carried out manually and the nurturing the health of vineyard soils is central to their philosophy.

This wine is a blend of Cabernet Sauvignon, Cabernet Franc, Merlot from vines grown on Ferretto soils (reddish brown clay).

The wine is aged in oak barrels for between 13 to 18 months depending the variety prior to blending. This is followed by a minimum of 12 months bottle ageing prior to release.

A complex nose delivers sour cherries and blackcurrants, grilled herbs and bell pepper with hints of coffee bean, vanilla and crushed peppercorn. The palette shows fresh fruity notes, round tannins and a great elegance which is combined with spice and well-balanced alcohol; the persistent finish shows spice, cassis and a hint of liquorice.

Pair with braised beef cheek, lamb with rosemary, matured cheeses.
